Best Beans on the Planet


This is one of those recipes that really embody true BBQ. Simple is always best and this bean recipe has proven that for years. It won “Best Beans on the Planet” early in my competition career and continues to win accolades with judges and more importantly friends and family.

Note: you’ll need cooked brisket for this recipe! It’s the secret ingredient that really makes these beans the best on the planet!

 

Ingredients:

2 - 15 ounce cans of Pork & Beans
1 - 15 ounce can of Dark Red Kidney Beans
1 - 15 ounce can of Black Beans
1 - small red onion (diced)
1 - green bell pepper (diced)
1 - red bell pepper (diced)
1 - Jalapeno Pepper (diced)
2 - Cups-Golden brown sugar
18 ounces of your favorite tomato based BBQ sauce
1 pound chopped bbq brisket (optional but recommended for best results)

Directions:

  • Preheat oven to 350 degrees
  • Drain beans and place in an aluminum foil pan
  • Remove seeds and dice peppers and onion
  • Place in aluminum pan
  • Mix in remainder of ingredients
  • Place pan on a cookie sheet and cook at 350 degrees for 2 hours
  • Remove from heat and let stand 30 minutes before serving

Serves: 12-18


Joe’s Squash Rockefeller


Many years ago I ate some Squash Rockefeller at a snazzy joint in Oklahoma City. The chef refused to give the recipe, so I made it my mission to not only create a recipe, but make one better!

Mission Accomplished…

It ain’t nothing for me to whip a fancy chef’s ass!

 

Ingredients:

4 large yellow squash
1/2 pound chopped frozen spinach
1/4 cup chopped green onions
1/4 cup sour cream
1/2 stick salted butter
1 teaspoon fresh garlic, finely chopped
1 teaspoon Joe’s All Purpose BBQ Seasoning
1/4 cup dry bread crumbs
3 tablespoons grated Parmesan cheese
1/2 cup grated Colby Jack cheese
Salt, ground pepper & red pepper to taste

Directions:

  • Preheat grill or oven to 350 degrees
  • Finely chop garlic in food processor
  • Drain water from spinach add spinach and green onions to garlic
  • Mix in processor using on/off turns until mixture is finely chopped and mixed
  • Combine sour cream, butter, All Purpose BBQ Seasoning, and bread crumbs in processor
  • Process until well blended.
  • Roast squash in grill or oven for 30 minutes
  • Remove from heat until you can handle the squash then slice squash in half lengthwise
  • Use spoon to hollow out seed area of squash
  • Top each half of squash with spinach mixture
  • Sprinkle liberally with Parmesan cheese
  • Roast squash at 350 degrees in grill or oven for 20 minutes

Serves: 8
